He is now selling his Yoko branded restaurants in Israel and moving his family and business to Boca Raton due to the Middle East turmoil, as missiles overhead have become a daily hindrance. He is currently working to franchise Yoko-San as well as his unique tech-at-the-table concept. At Yoko-San, sushi is an art. Sushi Chef Ruey Yan, author of the new book Sushi Fusion: A Unique and Artistic Presentation, was one of the early pioneers of art in sushi, creating striking edible masterpieces with a focus on fresh, never frozen, seafood and a flair for fusion experimentation. His specialties include Sushi Taco, Hamachi Roasted Garlic Chips and Blue Crab Cake with Spicy Tuna Jam. Chef Andy Wong specializes in Asian cuisine and wok cooking, creating authentic specialties prepared with traditional methods, such as Thai Curry Seafood Stew and Mongolian Beef, all free of MSG. Hibachi Chef Hoang Thanh cooks up flavorful creations before guests’ eyes on the hibachi grill. He prides himself on precise technique and offering such unusual hibachi proteins as sea bass, calamari, scallops and salmon. Yoko-San’s fusion specialties include Salmon Wellington, Seared Tenderloin with Foie Gras, Yoko-San Chicken and Waffles and Crispy Spicy Duck Breast. Lunch and dinner at Yoko-San arrive at the touch of a button via your tableside touch-screen display, featuring four different language options and virtual games such as Memory played with your dishes as well as the ability to compete against fellow diners, take a selfie at the table or even share your menu order on social media. Virtual iPad menus allow diners to browse dish photos (with four language options), read about ingredients, log into their social media accounts with their phone or password, “like” dishes and see what other diners and friends have liked as well. Yoko-San’s tech-at-the-table concept will also keep children entertained throughout the meal, leaving the adults to fully enjoy the dining experience. Despite the technology, the professional service aspect isn’t lost at the table, as waiters still take the time to take orders by hand and provide that personal touch and interaction. For its opening month, Yoko-San is offering complimentary valet for lunch and dinner guests through October.
